Deelish Coconut French Toast
I am always trying to come up with recipes that my little boy will eat, especially breakfast foods! Here is a simple, healthy and yummy french toast recipe that the whole family will love.
If you love coconut and holiday spices, this will bring you back to those cozy holiday mornings. The great thing is that they take less than 5 minutes to prepare and a short time to grill up. Cinnamon Coconut French Toast:
Ingredients:
- 4 pieces Ezekiel sprouted cinnamon raisin bread (our favorite)
- 1/2 cup coconut milk
- 1 Tbsp Tapioca, spelt or oat flour
- 1/2 Tbsp yacon, maple syrup or honey
- 1 tsp vanilla
- couple dashed of Celtic Sea Salt
- Few pinches of nutmeg, cloves and all spice
- 1/4 tsp cinnamon
- 1 tsp nutritional yeast, optional
- For a creamier batter, add 3 Tbsp of my raw young coconut pudding or almond cream (makes it extra delicious)
Directions:
- With a wire whisk, whisk the ingredients (minus the bread) until well mixed and smooth
- Toast the bread for a couple of minutes
- In a medium size fry pan, melt a small amount of coconut oil over medium heat.
- Dip each piece of bread in the coconut batter (both sides a couple of times until drenched in batter)
- Lay the bread in the heated fry pan and grill both sides for a few minutes until crispy and golden.
*Try serving with raw coconut oil and raw maple syurp or agave.
