Non-Dairy “Ice Cream” Pies

These are not your typical pies.   They are similar to an ice cream pie but vegan, gluten-free, delicious, mostly raw and healthy. These pies are a family tradition during the hot months…Fun, great for birthdays and get-togethers, refreshing and surprisingly easy on digestion.  Plus they are simple to make and even delicious for breakfast.  Enjoy these cold treats!!

PEANUTBUTTER DREAM PIE

Ingredients:

Crust:

  • 1 cup walnuts, almonds or pecans, soaked first in water for 6-8 hours
  • 3/4 pound dates, pitted
  • 1½ cups shredded coconut
  • 2 Tbsp Organic Peanut Butter
  • 1 Tbsp Cacao Powder
  • 2 tsp Vanilla extract

Filling:

  • 3 fresh bananas, chopped
  • 1 cup fresh or frozen & thawed mango chunks or mixed berries
  • 2 Tbsp Peanut Butter
  • 1 Tbsp raw Cacao Powder
  • 1 tsp Vanilla extract

Directions:

Crust:

  1. Combine all of the ingredients in a food processor in the order given. 
  2. Process the crust for 2 to 3 minutes until well blended.
  3. Press the mixture into a glass or ceramic pie plate.

 *If you have extra crust, try rolling it into small balls, put them in a bag into the freezer and grab them on the go for some yummy raw energy!

 Filling:

  1. Place the filling ingredients into a food processor and process until smooth.            
  2. Spread the filling over the pie crust.
  3. Freeze the pie for at least 3-4 hours before serving.

Makes 1 pie.

 

FROZEN “ICE CREAM” FRUIT PIE

Ingredients:

Crust:

  • 1 cup raw walnuts, almonds or pecans, soaked for 6-8 hours in water
  • 3/4 pound dates, pitted
  • 2 cups shredded coconut

Filling:

  • 3-4 cups frozen or fresh fruit

 *Suggestions: Mix fruits of your choice, using banana as a base.  To the banana, try adding pears, mangos, strawberries, peaches, blueberries or a combination of fruits. 

 Crust:

  1. Combine all of the ingredients in a food processor in the order given. 
  2. Process the crust for 2 to 3 minutes until well blended.
  3. Press the mixture into a glass or ceramic pie plate.

Filling:

  1. Put the fruit in a food processor and process until well pureed. 
  2. Pour into the pie crust.
  3. If you are using frozen fruit, freeze the pie for at least 1 hour before serving. 
  4. If you are using non-frozen fruit freeze the pie for at least 3-4 hours before serving.

 Makes 1 pie.
