Guilt-Free Raw Chocolate Pudding, YUM!
Last night I had a jar of soaked raw cashews that needed to be used up. So I threw it in the blender with some spices, sweetness and raw
cacao powder and OMG it was amazing! I even ate it for breakfast with my dehydrated raw cookie – heavenly!
The key to keeping this pudding guilt-free is to make sure and soak your cashews. Be sure to soak the nuts in water for at least 8 hours (on the counter and not in your refridgerator), helping to remove up to 50% of the fat. The fat that remains is easily digest and quite cleansing
This takes less than 5 minutes to prepare so you have to try it out…
- In a blender add about 1 cup soaked and rinsed raw cashews.
- Add in a few dashes of cinnamon powder, 1/2 tsp vanilla extract, about 1/2 cup fresh or dried coconut, 2-3 tsp Agave or raw honey (you might need more), about 3/4 cup water (start with less water and you can always add more if needed), dash of Celtic Sea Salt and 1/4 – 1/3 cup raw cacao powder (you can even find it in the bulk section of most health stores).
- Blend on high for about 1 minute until smooth and creamy.
- The pudding should be fairly thick and not too runny.
*Eat by itself; mix with young coconut pudding, or dip fruit in it. Strawberries, banana slices and Grapes are very yummy dipped in this chocolate pudding!
