Just Good Energy

Day 3 of Rebekah’s Food Journal:

Here is my last day of reporting everything that went into my mouth!  I definitely recommend keeping a food diary for yourself – it frog2is quite an eye opener.  It is amazing to read over what you ate during the day and see how much more or less you truly ate.  I am a grazer taking little bites all day but sometimes I would ask myself, “Are you really taking a bite of Ayden’s (my son) snack or that yummy raw dessert because you are hungry or just because it is there?”  We do a lot of mindless eating :)

Looking over my journal for the day, I realized that I did not eat as much as normal.  I ate often but very small amounts.  I realized that I spent over 4 hours making dehydrated energy bite/cookies today and smelling food and tasting the batter all day kind of kills my appetite.  However, it is not just about quantity but really the quality of nutrion that matters most.  Plus, I did not even leave the house today so my only exercise was chasing my son around!

Morning:

  • Green Drink: 1 Tbsp VitaMineral Greens, 1 tsp Matcha Green tea powder, vanilla stevia, cinnamon, Amazing Grass chocolate Superfoods and water
  • Ate the other half of Ayden’s piece of sprouted toast with coconut oil, Celtic Sea salt and Nutritional Yeast – very yum!
  • 1 cookies worth of raw choco banana energy bite batter – made with sprouted walnuts and oat groats, raw cacao, dates, banana, raisins, coconut, vanilla, and superfoods
  • Bridgit’s Chai, about 6 ounces, with about 3 ounces of unsweetened almond milk – Pacific Organic

Late Morning:

  • 1 partially dehydrated cran mango cookie (cranberries, mango, sprouted buckwheat, walnuts and oat groats , coconut, dates, raisins, banana and spices – topped with a teaspoon of organic TJ’s peanut butter
  • Handful of Ayden’s honey whole wheat pretzel sticks.

Afternoon/lunch:

  • 2 large raw carrots
  • 1/2 cup of spinach scrambled egg whites – sauteed spinach, garlic, red peppers, onion, fresh corn, tomatoes, dill and cilantro mixed with and scrambled with egg whites, topped with some Goat Gouda cheese from TJ’s.

Late Afternoon:

  • Small chunk of raw tempeh dipped in my home made thousand Island dressing mixed with my raw sunflower almond dressing
  • Cup of mint tea, banana and pear shared with Ayden
  • Mini green drink, minus the Matcha, shared with Ayden (he drank most of it)
  • Then I had my own energy drink: unsweetened Pacific almond milk, water, 1.5 tsp Matcha Tea, 30 ounces alkaline water, stevia, vanilla and cinnamon

Evening:

  • Quesadilla: Ezekiel sprouted tortilla, with a few ounces of goat cheese and Dijon mustard grilled up and dipped in homemade guacamole (avocado, minced garlic clove, lime juice, Celtic Sea Salt, fresh cilantro, raw corn, raw tomato)
  • Another 1/2 dehydrated raw Choco banana cookie

Nutrition Facts for today: I know, a bit lower than I should be

Calories: 1500

Protein: 56g

Carbs: 191g

Fiber: 34g

Fat: 47g

Vitamin A, B1, B2, B3, and B6 were all well over the recommended daily amounts

B12: only 1.23 mcg, which is 51% of the RDA…oops!

Vitamin E and D were a bit lower than normal – need to step up sunshine, whole grains, legumes and fish

Calcium, Iron, Magnesium, Phosphorus, potassium and zinc were all in the 60-80% range of reaching my RDA’s. 

*On days like these, I need to take my whole food multi by Catie’s or MegaFoods and make sure to start taking my Hemp Protein powder!
