Rebekah’s Food Journal Day 1

The number one question I get from clients and readers is “What do you eat?”.  Before I begin working with a new client, I always have journalthem keep a food journal for a minimum of three days.  I then analyze it, determine their nutrient intake and go from there.  I have been promising for the past year to keep my own food journal, post it daily for three days, and even post my nutrient intake (vitamins, minerals, carbs, fats, protein, calories, etc.).  Here is day one – a bit unique as always :)

 

Morning:

  • 1st thing had a green drink: 16 oz alkaline water, 8 drops vanilla stevia, 1 tsp Matcha green tea powder, 2 rounded teaspoons of VitaMineral Greens. (I normally add 1/2 scoop of Amazing meal but was out)
  • Few ounces of fresh Young Thai Coconut water
  • About 1/2 hour later I had 1 dehydrated raw veggie burger/cracker – one of my JGE products made with sprouted buckwheat, sunflower seeds, veggies, basil, garlic, onion, etc.) and a few bites of sprouted coconut quinoa from last night’s dinner
  • Chai Time: Bridgit’s Chai whipped with unsweetened almond milk – about 8oz

Late Morning:

  • Hunk of raw Tempeh dipped in my Thousand Island dressing (Grape seed oil Veganaise, Balsamic Vinegar, Dijon mustard, Ketchup, salsa and my JGE Sunflower Almond Dressing – all shaken up)
  • Handful of raw almonds and 1 of my JGE Spice Yam dehydrated cookies
  • 34 ounces of alkaline water

Afternoon:

  • Half of a Gingerberry Kombucha
  • 4 Dark chocolate (fruit sweetened) Macadamia nut clusters – yum!
  • Daily wrap: Sprouted Ezekiel Tortilla with my Tahini Dill Pate (from my JGE book), my homemade Thousand Island Dressing, grilled sprouted tofu, cucumber, red bell pepper, onion, dill pickles and lettuce

Late Afternoon:

  • Afternoon drink: 1 1/2 tsp Matcha Green tea powder mixed with hemp milk, alkaline water, vanilla stevia, vanilla extract and cinnamon powder
  • Couple bites of my son’s goat cheese sandwich melted on sprouted Ezekiel bread
  • 1 package of Sea’s Gift roasted seaweed snack
  • 34 ounces alkaline water

Evening:

  • Homemade tomato Bisque (pureed soup made with tomatoes, coconut milk, onion, garlic, celery, carrots, coconut oil, nutritional yeast, pepper, red bell pepper and a little goat cheese)
  • Few sips of Kombucha tea – Ginger berry and a bite of a peanut Dolphin dark chocolate

Here are my nutrition fact totals for today:

  • 1800 Calories
  • 65 grams fat
  • 220 Carbohydrates
  • 40 grams fiber
  • 80 grams protein
  • 140% Vitamin C
  • 160% Calcium
  • 220% Iron
  • 182% Vitamin A
  • 299% Magnesium
  • Most of the B’s range from 70 to 95%
  • 75% Vitamin E
  • 187% Folate
  • 20% Vitamin D – also spent over 30 minutes in the sun
  • 140% Zinc

and the list goes on…  Until tomorrow!!
