Flourless Oatmeal Bites – Toddler Approved!
My 19 month old son is all about finger foods right now. Unless it is a food that he can feed to himself, he is generally not interested. He likes
cereal and loves peanut butter, so I decided to make him little breakfast bites. They take less than 5 minutes to prepare and cook quickly. Ayden LOVES them and so does my husband J
Most cookies have flour added to help “glue” the cookie together. I wanted to keep the cookie as simple and healthy as possible so I used peanut butter (you could use any nut butter like almond) and banana to hold it together. That way they get a little fruit, protein and whole grain in a few bites.
Directions:
1. Preheat oven to 350 degrees.
2. In a large bowl mix 2 cups organic rolled oats, ½ tsp baking soda, ½ tsp cinnamon, and a few dashes of Celtic Sea Salt.
3. In a small bowl mash an entire ripe banana and add it to the oat mixture.
4. To the mixture, stir in the wet ingredients: 1/3 cup peanut or almond butter, 1/3 cup agave or honey, and ½ cup raisins. Mash well with your hands!
5. Option: for extra flavor you can add about ¼ cup of Baby Familia to the batter and only use 1¾ cup rolled oats. Baby familia has a variety of grains along with dried banana and apples – my son loves it.
6. Place dollops of the cookie batter onto a baking tray. I make them small enough to eat in a few bites – use a rounded teaspoon.
7. Press the batter down with your spoon – don’t worry, because they don’t have flour added they won’t spread out.
8. Bake for about 12 minutes. Don’t overcook because they are best soft and chewy.
9. Let cool for a few minutes and they are ready.
